Carrot-Coconut Pudding

Ingredients:

500 gms carrots, grated
2 coconuts, grated
400 gms sugar
50 gms kova
3-4 cardamoms, powdered
50 gms ghee or butter

Method:
  1. Boil grated carrots in hot water for 3-5 minutes. Drain water immediately and when cool squeeze all the water.
  2. Heat ghee in a pan and fry the boiled grated carrots for few minutes. Also add 200 gms sugar, kova, cardamom powder and cook until the mixture thickens like halwa. When done, remove and keep aside.
  3. Mix grated coconut, remaining sugar and heat until the mixture thickens.
  4. Now take a pudding bowl and pour half of the coconut mixture. Above that, pour carrot mixture as a layer and again coconut mixture on the above. When cool, invert the bowl and make pieces of the pudding.
